Jalapeño Jelly Recipe

Ingredients
  • 2 tbsps fresh lime juice
  • 3 c sugar
  • 1/2 (6-oz) package liquid fruit pectin
  • 1/2 c cider vinegar
  • 3 fresh jalapeño peppers, seeded & coarsely sliced
  • 1/2 green bell pepper, coarsely sliced

Directions
  • Step #1 Process jalapeño & bell peppers in a food processor/blender until smooth.
  • Step #2 Combine pepper puree, sugar, & vinegar in a nonaluminum saucepan.
  • Step #3 Bring to a boil over medium-high heat, stirring constantly.
  • Step #4 Boil 3 mins; stir in the pectin & lime juice.
  • Step #5 Boil, stirring constantly, 1 min.
  • Step #6 Remove from heat, & skim off foam with a metal spoon.
  • Step #7 Pour into hot, sterilized jars, filling to 1/4 inch from top; wipe jar rims.
  • Step #8 Cover up at once with metal lids, & screw on bands; cool.
  • Step #9 Store in refrigerator.
  • Step #10 Serve over cream cheese with crackers or toast as an appetizer, or with meats as a relish.
