Caesar-crusted Crispy Chicken Strips Recipe

Ingredients
  • 1/4 tsp freshly ground pepper
  • 1/2 c all-purpose flour
  •  Romaine lettuce leaves
  • 1/2 tsp sea salt
  • 3/4 c creamy Caesar dressing, divided
  • 1 c canola or safflower oil
  • 1 c Japanese breadcrumbs*
  • 1/4 c buttermilk
  • 1 1/2 lbs chicken breast strips
  • 2 tbsps sliced fresh parsley

Directions
  • Step #1 Combine 1/2 c Caesar dressing & next 3 ingredients in a medium bowl.
  • Step #2 Add chicken; toss to coat.
  • Step #3 Combine breadcrumbs, flour, & parsley in a shallow dish or pie plate.
  • Step #4 Dredge chicken in breadcrumb mixture, pressing carefully to adhere crumbs to both sides.
  • Step #5 Place on a baking sheet.
  • Step #6 Chill 30 mins.
  • Step #7 Heat oil In a large-ish deep-sided skillet 2 to 3 mins or until hot.
  • Step #8 Cook chicken, in batches, 3 to 4 mins on each side or until golden brown.
  • Step #9 Drain on paper towels.
  • Step #10 Serve warm or chilled with remaining 1/4 c Caesar dressing & Romaine leaves.
  • Step #11 *For testing purposes, we used Panko Japanese breadcrumbs.
