Saffron-marinated Chicken Skewers (kesari Malai Tikka) Recipe

Ingredients
  • 2 tbsps 2% reduced-fat milk
  •  Cooking spray
  • 1 tsp fresh lemon juice
  • 1 tbsp grated peeled fresh ginger
  • 1/2 tsp freshly ground black pepper
  • 2 lbs skinless, boneless chicken breast, cut into 1 1/2-inch pieces
  • 1/2 c Yogurt Cheese
  • 1/2 tsp saffron threads, crushed
  • 2 tbsps almond meal
  • 1 tsp salt

Directions
  • Step #1 Prepare grill.
  • Step #2 Combine milk & saffron in a small microwave-safe bowl, & microwave at high 20 seconds.
  • Step #3 Let stand 5 mins.
  • Step #4 Combine the milk mixture, Yogurt Cheese, & next 5 ingredients (through pepper) In a large-ish zip-top plastic bag.
  • Step #5 Add chicken, tossing to coat; seal.
  • Step #6 Marinate in refrigerator 2 1/2 hrs, turning every once in awhile.
  • Step #7 Remove chicken from bag, & discard marinade.
  • Step #8 Divide chicken evenly onto each of 20 (6-inch) skewers.
  • Step #9 Place skewers on grill rack coated with cooking spray; grill 15 mins or until cooked through, turning once.
