Pickled Salmon And Shrimp Recipe

Ingredients
  • 3/4 c white vinegar
  • 25 black peppercorns
  • 1 (1-lb) salmon fillet
  • 1/2 tsp salt
  • 1 small red onion, thinly sliced & separated into rings
  • 1/4 c sugar
  • 1 bay leaf
  • 1 tsp capers
  • 36 small shrimp (about 1/2 lb), peeled
  • 1 large lemon, sliced
  • 3 tsps pickling spice, divided
  • 3/4 c dry vermouth

Directions
  • Step #1 Pour water into a large saucepan to a depth of 2-inches.
  • Step #2 Add 1 1/2 tsps pickling spice, salt, & lemon; bring to a boil.
  • Step #3 Cover up, reduce heat, & let simmer 10 mins.
  • Step #4 Add salmon & shrimp; simmer 7 mins or until fish flakes easily when tested with a fork & the shrimp are done.
  • Step #5 Drain fish mixture, discarding cooking liquid & lemon slices.
  • Step #6 Let cool.
  • Step #7 Remove skin & bones from fish; break fish into bite-size pieces.
  • Step #8 Layer fish, shrimp, & onion rings in a 1-quart jar.
  • Step #9 Combine 1 1/2 tsps pickling spice, vermouth, vinegar, peppercorns, capers, sugar, & bay leaf in a saucepan; bring to a boil.
  • Step #10 Reduce heat; simmer 1 min or until sugar dissolves.
  • Step #11 Pour over fish mixture in jar.
  • Step #12 Cover up & chill several hrs or up to 5 days.
  • Step #13 Serve with salad greens, crackers, or other vegetables on an antipasto platter.
