Piquillo Peppers Stuffed With Artichoke Salad Recipe

Ingredients
  •  Garnish: fresh parsley sprigs
  • 2 plum tomatoes, seeded & sliced
  • 1 (14-oz) can artichoke hearts, drained
  • 1/3 c garlic mayonnaise*
  • 1 (220-gram) jar piquillo peppers, drained

Directions
  • Step #1 Chop artichoke hearts; drain on paper towel.
  • Step #2 Combine artichokes, tomatoes, & garlic mayonnaise.
  • Step #3 Stuff peppers with artichoke mixture.
  • Step #4 Garnish with parsley sprigs.
  • Step #5 *Note: To make garlic mayonnaise, crush 1 garlic clove with 1 tsp extra virgin olive oil.
  • Step #6 Stir in 1/3 c mayonnaise.
