Fresh Mozzarella And Herb Crostini Recipe

Ingredients
  • 2 to 3 tbsps sliced fresh herb leaves such as thyme, marjoram, oregano, sage, or rosemary (one kind or a mixture)
  • 1 baguette (8 oz.)
  • 3 to 4 tbsps extra-virgin olive oil
  • 1 1/4 lbs fresh mozzarella cheese
  •  Salt & fresh-ground pepper

Directions
  • Step #1 Cut baguette diagonally into 1/3-inch-thick slices.
  • Step #2 Set slices on a rack on a 14- by 17-inch baking sheet.
  • Step #3 Bake in a 425° regular or convection oven until golden, 6 to 8 mins.
  • Step #4 Drain mozzarella & pat dry; cut into 1/4-inch-thick slices.
  • Step #5 Arrange on toast, cutting slices to fit.
  • Step #6 Drizzle olive oil over cheese.
  • Step #7 Sprinkle top with herbs & salt & pepper to taste.
