Smoked-salmon Quesadillas Recipe

Ingredients
  • 8 (8-inch) fat-free flour tortillas
  • 1/4 tsp freshly ground black pepper
  • 3/4 c tub-style light cream cheese with chives & onions (about 6 oz)
  • 8 oz smoked salmon, coarsely sliced

Directions
  • Step #1 Spread cream cheese evenly over 4 tortillas.
  • Step #2 Divide the salmon among tortillas.
  • Step #3 Sprinkle top with pepper.
  • Step #4 Top each portion with 1 tortilla, pressing carefully.
  • Step #5 Heat a nonstick skillet over medium-high heat.
  • Step #6 Cook each quesadilla 2 mins on each side.
  • Step #7 Cut each quesadilla into 6 wedges.
