Mock Goat Cheese Recipe

Ingredients
  • 1 tbsp coarsely ground pepper
  •  Garnishes: fresh parsley, basil, & thyme sprigs
  • 2 (4-oz) packages crumbled feta cheese
  • 2 tsps minced fresh parsley
  • 1 (8-oz) package cream cheese, softened

Directions
  • Step #1 Beat first 3 ingredients at medium speed with an electric mixer until smooth.
  • Step #2 Shape into a 10- x 2-inch log; coat with pepper.
  • Step #3 Wrap in plastic wrap; freeze 15 mins.
  • Step #4 Serve with crackers or garlic toast.
  • Step #5 Garnish, if desired.
  • Step #6 *Dried Tomato Mock Goat Cheese: omit pepper, roll log in 1/4 c drained & sliced ried tomato in oil.
  • Step #7 NOTE: A food processor/blender may be used instead of a mixer.
