Roasted Asparagus, Tomatoes, And Onions Recipe

Ingredients
  • 1/2 tsp sugar
  • 2 c grape or cherry tomatoes
  •  Cooking spray
  • 3 lbs asparagus
  • 3 tsps olive oil, divided
  • 1 (16-oz) package frozen pearl onions, thawed
  • 1/2 tsp salt, divided

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Coat 2 baking sheets with cooking spray.
  • Step #3 Heat 2 tsps olive oil In a large-ish nonstick skillet over medium-high heat.
  • Step #4 Add onions, & sprinkle with sugar & 1/4 tsp salt.
  • Step #5 Cook, stirring frequently, until the onions are soft & golden, about 6 mins.
  • Step #6 Set aside.
  • Step #7 Snap off tough ends of asparagus & discard.
  • Step #8 Combine with remaining 1 tsp oil, & remaining 1/4 tsp salt In a large-ish bowl; toss to coat.
  • Step #9 Spread asparagus evenly on prepared pans.
  • Step #10 Place tomatoes in the bowl that held the asparagus, & toss to coat them in remaining oil & salt.
  • Step #11 Add onion.
  • Step #12 Roast the asparagus 10 mins or until its brightly colored & still crisp.
  • Step #13 (Recipe may be prepared to this point up to a day ahead.
  • Step #14 ) Add onion-and-tomato mixture to pans; cook 5 mins or until tomatoes are heated.
