Roast Garlic And Edamame Dip Recipe

Step #1 Cut about 1/4 inch off the top of the garlic head, so the cloves are slightly exposed, but don't peel the garlic.
Step #2 Wrap the head loosely in foil wrap, & place this in a preheated 400° oven for 45 mins or until garlic is very soft & golden.
Step #3 Let cool; then squeeze the garlic cloves out of the paperlike peel.
Step #4 Meanwhile, bring 2 c water to a boil; add edamame, & boil 5 mins.
Step #5 Drain.
Step #6 Combine edamame, & next 5 ingredients (through 3 tbsps water) in a food processor/blender, garlic, cumin, & pulse until smooth.
Step #7 Garnish mixture with the sliced cilantro & serve.
