Roast Garlic And Edamame Dip Recipe

Ingredients
  • 1 small whole garlic head
  • 3 tbsps water
  • 1/4 c reduced-fat sour cream
  • 1 tbsp sliced fresh cilantro
  • 2 c water
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 1 (16-oz) package frozen shelled edamame (about 2 1/2 c)
  • 5 tbsps lemon juice
  • 1 tbsp extra-virgin olive oil

Directions
  • Step #1 Cut about 1/4 inch off the top of the garlic head, so the cloves are slightly exposed, but don't peel the garlic.
  • Step #2 Wrap the head loosely in foil wrap, & place this in a preheated 400° oven for 45 mins or until garlic is very soft & golden.
  • Step #3 Let cool; then squeeze the garlic cloves out of the paperlike peel.
  • Step #4 Meanwhile, bring 2 c water to a boil; add edamame, & boil 5 mins.
  • Step #5 Drain.
  • Step #6 Combine edamame, & next 5 ingredients (through 3 tbsps water) in a food processor/blender, garlic, cumin, & pulse until smooth.
  • Step #7 Garnish mixture with the sliced cilantro & serve.
