Romesco Sauce Recipe

Ingredients
  • 1 tsp crushed red pepper
  • 1 tbsp olive oil
  • 2 tbsps slivered almonds, toasted
  • 1/2 c dry breadcrumbs
  • 2 garlic cloves, peeled
  • 2 tbsps sliced fresh parsley
  • 1 (28-oz) can whole plum tomatoes, undrained
  • 3/4 tsp Spanish smoked paprika
  •  Cooking spray
  • 1/2 tsp salt
  • 2 tbsps white vinegar
  • 2 red bell peppers
  • 3 tbsps organic vegetable broth (such as Swanson Certified Organic)

Directions
  • Step #1 Preheat broiler.
  • Step #2 Cut bell pepper in half lengthwise; discard seeds & membranes.
  • Step #3 Place pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
  • Step #4 Broil 10 mins or until blackened.
  • Step #5 Place in a zip-top plastic bag; seal.
  • Step #6 Let stand 5 mins.
  • Step #7 Peel & coarsely chop.
  • Step #8 Set aside.
  • Step #9 Preheat oven to 275°.
  • Step #10 Combine tomatoes & garlic in a 13 x 9-inch baking dish coated with cooking spray.
  • Step #11 Bake at 275° for 2 1/2 hrs or until most of liquid has evaporated.
  • Step #12 Combine bell peppers, tomato mixture, breadcrumbs, & remaining ingredients in a food processor/blender; process until smooth.
