Chickpeas And Balsamic Vinegar Bruschetta Recipe

Ingredients
  • 1/2 baguette
  • 1 tbsp extra-virgin olive oil
  • 1/2 c fresh flat-leaf parsley leaves, roughly sliced
  • 3/4 tsp kosher salt
  • 1 clove garlic, finely sliced
  • 1/4 tsp black pepper
  • 1 15-oz can chickpeas, drained, rinsed, & roughly sliced
  • 2 tbsps balsamic vinegar

Directions
  • Step #1 Thinly slice half a baguette.
  • Step #2 Place the rounds on a baking sheet & broil them until they're golden brown (about 1 1/2 mins per side).
  • Step #3 In a medium bowl, parsley leaves, mix the chickpeas, salt, garlic, oil, balsamic vinegar, & pepper.
  • Step #4 Spread the mixture on the rounds.
