Caper-and-olive Brochette Recipe

Ingredients
  • 2 tbsps extra-virgin olive oil
  • 1/2 c kalamata olives, pitted & sliced
  • 1 tsp sugar
  • 3 garlic cloves, pressed
  • 8 plum tomatoes
  • 2 tbsps balsamic vinegar
  • 2 tbsps sliced fresh basil
  •  French baguette slices, toasted
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 tbsps capers

Directions
  • Step #1 Dice tomatoes; sprinkle with salt.
  • Step #2 Let stand on paper towels or in a colander for 1 hr.
  • Step #3 Combine tomato, olives, & next 7 ingredients; chill 1 hr.
  • Step #4 Serve on baguette slices.
