Roasted Sweet Onion Dip Recipe

Ingredients
  • 2 large Vidalia or other sweet onions, peeled & quartered
  • 1/3 c low-fat sour cream
  • 1 whole garlic head
  • 1 tbsp fresh lemon juice
  • 1 tsp salt, divided
  • 1/4 c sliced fresh parsley
  • 1 tbsp olive oil

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Place onion In a large-ish bowl; drizzle with oil.
  • Step #3 Sprinkle top with 1/2 tsp salt; toss to coat.
  • Step #4 Remove white papery skin from garlic head (do not peel or separate the cloves).
  • Step #5 Wrap in foil wrap.
  • Step #6 Place onion & foil wrap-wrapped garlic on a baking sheet.
  • Step #7 Bake at 425° for 1 hr; cool 10 mins.
  • Step #8 Chop onion.
  • Step #9 Separate garlic cloves; squeeze to extract garlic pulp.
  • Step #10 Discard skins.
  • Step #11 Combine onion, 1/2 tsp salt, garlic, sour cream, & remaining ingredients In a large-ish bowl.
  • Step #12 Cover up & chill 1 hr.
