Mushroom-and-brie Petite Elephant Ears Recipe

Ingredients
  • 1 1/3 c finely sliced shiitake mushrooms
  • 1/4 c butter or margarine, melted & divided
  • 1 egg yolk
  • 1 (8-oz) round Brie, cut into 5 1/2 dozen (1/2-inch) cubes
  • 1/2 tsp salt
  • 1 (17 1/4-oz) package frozen puff pastry, thawed
  • 1 tbsp water

Directions
  • Step #1 Sauté 1 1/3 c finely sliced shiitake mushrooms in 1 tbsp butter until tender.
  • Step #2 Roll 1 pastry sheet into a 13- x 11-inch rectangle.
  • Step #3 Stir together butter, & salt.
  • Step #4 Brush half of butter mixture, & spread half of the mushroom mixture over pastry sheet.
  • Step #5 Roll up pastry, jellyroll fashion, starting with each short side & ending at middle of pastry sheet.
  • Step #6 Repeat procedure with remaining pastry sheet, butter mixture & mushroom mixture.
  • Step #7 Cut rolls crosswise into 1/3-inch-thick slices.
  • Step #8 Place on lightly greased baking sheets.
  • Step #9 Whisk together egg yolk & 1 tbsp water, & brush evenly over pastries.
  • Step #10 Bake at 375º for 10 to 15 mins or until golden brown.
  • Step #11 Top each pastry with a 1/2-inch cube of Brie in last 3 mins of baking.
