Mussels In Red Sauce Recipe

Ingredients

2 tbsps sliced fresh flat-leaf parsley
1 1/2 tsps olive oil
2 lbs mussels, scrubbed & debearded
1/4 to 1/2 tsp crushed red pepper
1/4 c finely sliced onion
1 1/2 tbsps sliced fresh oregano
1 garlic clove, sliced
1 (28-oz) can crushed tomatoes, undrained

Directions

Step #1 Heat oil In a large-ish Dutch oven over medium-high heat.
Step #2 Add onion; sauté 3 mins or until tender.
Step #3 Add garlic; sauté 1 min.
Step #4 Stir in tomatoes; partially cover, reduce heat, & let simmer 30 mins.
Step #5 Add parsley & remaining ingredients; cook 5 mins or until shells open, stirring every once in awhile.
Step #6 Remove from heat; discard any unopened shells.
