Mussels In Red Sauce Recipe

Ingredients
  • 2 tbsps sliced fresh flat-leaf parsley
  • 1 1/2 tsps olive oil
  • 2 lbs mussels, scrubbed & debearded
  • 1/4 to 1/2 tsp crushed red pepper
  • 1/4 c finely sliced onion
  • 1 1/2 tbsps sliced fresh oregano
  • 1 garlic clove, sliced
  • 1 (28-oz) can crushed tomatoes, undrained

Directions
  • Step #1 Heat oil In a large-ish Dutch oven over medium-high heat.
  • Step #2 Add onion; sauté 3 mins or until tender.
  • Step #3 Add garlic; sauté 1 min.
  • Step #4 Stir in tomatoes; partially cover, reduce heat, & let simmer 30 mins.
  • Step #5 Add parsley & remaining ingredients; cook 5 mins or until shells open, stirring every once in awhile.
  • Step #6 Remove from heat; discard any unopened shells.
