Roasted Corn-and-black Bean Salad Recipe

Ingredients
  • 1 (15-oz) can black beans, rinsed & drained
  • 2 c fresh corn kernels (about 3 ears)*
  • 1/2 tsp salt
  • 2 tsps hot sauce
  • 1/2 tsp pepper
  • 1/3 c lime juice
  • 1/2 tsp ground cumin
  • 2 tbsps sliced fresh cilantro
  • 1/2 jalapeño pepper, seeded & sliced
  • 1 c sliced tomato
  • 1/4 c red onion, finely sliced
  • 1/2 tsp ground coriander

Directions
  • Step #1 Place corn on an aluminum foil wrap-lined baking sheet.
  • Step #2 Broil corn 5 inches from heat 12 mins or until lightly browned, stirring once.
  • Step #3 Remove from oven, & let this stand 10 mins.
  • Step #4 Combine corn & remaining ingredients In a large-ish bowl.
  • Step #5 Cover up & chill until ready to serve.
  • Step #6 *2 c frozen whole kernel corn, thawed, or 2 c canned whole kernel corn may be substituted.
