Marinated Vegetable Appetizers Recipe

Ingredients
  • 1 tsp cracked pepper
  • 1 (10-oz) package frozen brussels sprouts
  • 1 (5.75-oz) can jumbo pitted ripe olives, undrained
  • 1 c red wine vinegar
  • 2 green bell peppers
  • 1/2 c vegetable oil
  • 1 tsp garlic powder
  • 1/2 c olive oil
  • 1 (6-oz) jar jumbo pimiento-stuffed olives, undrained
  • 1 yellow onion
  • 1 (8-oz) package fresh small mushrooms
  • 2 zucchini
  • 4 small yellow squash
  • 1 tsp dried oregano
  • 1 pint cherry tomatoes
  • 1 tbsp salt
  • 1 (14-oz) can quartered artichoke hearts, undrained
  • 1 lb fresh broccoli

Directions
  • Step #1 Combine first 7 ingredients in a saucepan; bring to a boil.
  • Step #2 Cool.
  • Step #3 Cook Brussels sprouts according to package directions; drain.
  • Step #4 Cut bell peppers into thin strips.
  • Step #5 Slice onion, zucchini, & yellow squash; separate onion into rings.
  • Step #6 Cut broccoli into flowerets.
  • Step #7 Drain olives & artichoke hearts.
  • Step #8 Place vinegar mixture & vegetables In a large-ish zip-top plastic bag.
  • Step #9 Seal & chill 8 hrs, turning every once in awhile.
  • Step #10 Add mushrooms & tomatoes, & toss carefully.
  • Step #11 Serve as soon as possible.
