"festival" | Jamaican Cornbread Fritters Recipe

Ingredients
  • 3/4 tsp salt
  • 1 c all-purpose flour
  • 1 1/2 tbsps sugar
  • 1/8 tsp baking soda
  • 1/4 tsp baking powder
  • 3/4 c water
  • 1/2 c cornmeal
  • 2 tsps vegetable oil, plus more for frying

Directions
  • Step #1 In a bowl, cornmeal, salt, mix the flour, sugar, baking powder & baking soda.
  • Step #2 Add the water & the 2 tsps of oil & stir carefully with a wooden spoon until thoroughly mixed.
  • Step #3 Cover up with plastic wrap & let this stand at about room temp for 1 hr.
  • Step #4 In a medium saucepan, heat 1 inch of oil to 350°.
  • Step #5 Using well-oiled hands, roll tbsp-size pieces of the dough about 3 inches long, then flatten them slightly & drop into the hot oil.
  • Step #6 If the dough sticks to your hands, just peel it off; don't worry about the shape.
  • Step #7 Fry 3 or 4 fritters at a time until golden brown, about 2 mins per side.
  • Step #8 Using a slotted spoon, transfer the fritters to a rack set over a baking sheet to drain.
  • Step #9 Adjust the heat if necessary to maintain 350°.
  • Step #10 Serve as soon as possible.
