Roasted Sweet Potato Dip Recipe

Ingredients
  • 3 c sliced peeled sweet potato (about 1 lb)
  •  Breadsticks (optional)
  • 2 1/2 c sliced onion
  • 1 tbsp olive oil
  • 1 1/2 c sliced carrot
  • 1/8 tsp pepper
  • 1/4 tsp salt
  • 1/4 c tahini (sesame-seed paste)

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine first 4 ingredients In a large-ish bowl.
  • Step #3 Place sweet potato mixture on a jelly-roll pan; bake this at 350° for 1 hr or until sweet potatoes are tender.
  • Step #4 Combine sweet potato mixture, salt, tahini, & pepper in a food processor/blender, & process until smooth.
  • Step #5 Serve with breadsticks, if desired.
