Tuna Summer Rolls Recipe

Ingredients
  •  Sauce:
  • 1 tsp sugar
  • 1/4 c white vinegar
  • 1 (1/2-lb) tuna steak
  • 1 1/2 tsps minced shallots
  • 2 c trimmed watercress
  • 8 (8-inch) round sheets rice paper
  • 2 tbsps mirin (sweet rice wine)
  • 1 tbsp low-sodium soy sauce
  • 2 tsps minced shallots
  • 1 tsp fish sauce
  • 2 tsps minced jalapeño pepper
  • 1 tbsp fish sauce
  • 2 tbsps minced peeled fresh ginger
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 tsp sugar
  • 1 1/4 c water
  • 1 c uncooked sushi rice or short-grain rice
  •  Rolls:
  • 1 tsp minced jalapeño pepper

Directions
  • Step #1 To prepare rolls, rinse the rice thoroughly in a sieve.
  • Step #2 Drain well.
  • Step #3 Bring 1 1/4 c water to a boil in a medium saucepan; add rice.
  • Step #4 Cover up, reduce heat, & let simmer 20 mins or until liquid is absorbed.
  • Step #5 Remove from heat, & let this stand 5 mins.
  • Step #6 Stir in ginger, sugar, mirin, shallots, fish sauce, minced jalapeño pepper, & salt.
  • Step #7 Combine soy sauce & 1 tsp sugar; brush over tuna.
  • Step #8 Marinate in refrigerator 10 mins.
  • Step #9 Heat a nonstick skillet over medium-high heat.
  • Step #10 Add tuna to pan; cook 1 1/2 mins on each side or until desired degree of doneness.
  • Step #11 Cut tuna into 8 (1/4-inch-thick) slices.
  • Step #12 Add hot water to a large, shallow dish to a depth of 1 inch.
  • Step #13 Place 1 rice paper sheet in dish.
  • Step #14 Let stand 30 seconds or just until soft.
  • Step #15 Place sheet on a flat surface.
  • Step #16 Arrange 1/4 c watercress to cover half of sheet, leaving a 1/2-inch border.
  • Step #17 Top with 1/3 c rice mixture; spread evenly.
  • Step #18 Arrange 1 tuna slice over rice.
  • Step #19 Fold sides of sheet over filling; starting with filled side, roll up jelly-roll fashion.
  • Step #20 Repeat procedure with remaining rice paper sheets, rice mixture, watercress, & tuna.
  • Step #21 Cut each roll in half diagonally.
  • Step #22 To prepare sauce, mix vinegar & remaining ingredients.
  • Step #23 Arrange 2 roll halves on each of 8 plates; serve 2 1/4 tsps sauce with each serving.
