Tex-mex Nachos Recipe

Ingredients
  • 1 (15-oz) can kidney beans, drained
  • 3/4 lb ground round
  • 3 c shredded iceberg lettuce
  • 1 (8 3/4-oz) can no-salt-added whole-kernel corn, drained
  • 1/8 tsp pepper
  • 1/4 tsp garlic powder
  • 1 c sliced tomato
  • 1/2 c salsa
  • 2 oz fat-free baked tortilla chips (about 2 c or about 18 chips)
  • 1/4 c sliced green onions
  • 1/2 c fat-free sour cream
  • 1 c (4 oz) shredded reduced-fat sharp cheddar or Monterey Jack cheese
  • 3/4 c taco sauce

Directions
  • Step #1 Cook meat & green onions In a large-ish nonstick skillet over medium-high heat until browned, stirring to crumble.
  • Step #2 Drain well, & return meat mixture to pan.
  • Step #3 Stir in taco sauce, garlic powder, beans, pepper, & corn, & cook this until thoroughly heated.
  • Step #4 Spoon 1 c meat mixture over 1/2 c chips, 1/4 c tomato, 1/4 c cheese, & top this with 3/4 c lettuce, 2 tbsps salsa, & 2 tbsps sour cream.
  • Step #5 Repeat with remaining ingredients.
