South-of-the-border Deviled Eggs Recipe

Ingredients
  • 1/2 c mild salsa
  • 1 dozen large hard-cooked eggs, peeled
  • 2 tbsps sweet pickle juice
  • 1 small ripe avocado, peeled & coarsely sliced
  • 2 tbsps mayonnaise
  • 2 green onions, finely sliced
  • 1/2 tsp chili powder (optional)
  • 1 tbsp dry Ranch dressing mix

Directions
  • Step #1 Slice eggs in half lengthwise; carefully remove yolks, keeping egg white halves intact.
  • Step #2 Mash together yolks & avocado in a medium bowl.
  • Step #3 Stir in green onions & next 3 ingredients until smooth.
  • Step #4 Spoon yolk mixture evenly into egg white halves.
  • Step #5 Sprinkle top evenly with chili powder, if desired.
  • Step #6 Cover up & chill at least 1 hr or up to 24 hrs.
  • Step #7 Dollop with salsa just before serving.
