Maryland Blue Crab Stew
Ingredients
Creole Sauce
1/2 tsp ground red pepper
1/4 tsp Worcestershire sauce
3/4 tsp salt
1 c biscuit mix
1/2 lb fresh crabmeat
1/8 tsp garlic powder
1/4 c milk
1/2 tsp grated lemon rind
1 tbsp sliced fresh parsley
Vegetable oil
2 tbsps fresh lemon juice
1 large egg
Directions
Step #1 Drain & flake crabmeat, removing any bits of shell.
Step #2 Stir together biscuit mix & next 5 ingredients; make a well in center of mixture.
Step #3 Combine milk & next 3 ingredients; add to dry ingredients, stirring just until moistened.
Step #4 Add crabmeat.
Step #5 Pour vegetable oil to a depth of 2 inches in a Dutch oven; heat to 375°.
Step #6 Drop batter by tspfuls into hot oil, a few at a time, & fry, 30 seconds or until golden brown, turning once.
Step #7 Serve as soon as possible with Creole Sauce.
