Corn-and-black Bean Cakes With Smoked Salmon Salsa Recipe

Ingredients
  • 3/4 c milk
  • 1 tsp baking powder
  • 1 c all-purpose flour
  • 3/4 tsp salt
  • 3/4 c canned black beans, rinsed & drained
  • 2 large eggs
  • 3/4 tsp coarsely ground pepper
  • 1/4 c butter or margarine, melted
  • 3/4 c frozen whole kernel corn, thawed
  •  Smoked Salmon Salsa

Directions
  • Step #1 Whisk together first 5 ingredients In a large-ish bowl; stir in the corn & next 3 ingredients.
  • Step #2 Pour about 1/4 c batter for each pancake into a nonstick skillet over medium-high heat.
  • Step #3 Cook until tops of pancakes are covered with bubbles & edges appear done; turn & cook other side.
  • Step #4 Serve with Smoked Salmon Salsa.
