Step #1 In an 8- or 9-inch square pan, 1 c coarsely sliced red bell peppers, mix 1 c coarsely sliced firm-ripe tomatoes, 2 cloves sliced garlic, & 1 tsp olive oil.
Step #2 Cover up tightly with foil wrap.
Step #3 Bake in a 350° oven until tomatoes mash easily, 50 to 60 mins.
Step #4 Pour vegetable mixture into a mixer or food processor/blender.
Step #5 Add 1/2 c fresh cilantro, 1 1/2 tsps balsamic vinegar, 1/3 c sliced green onions, & 1/4 tsp sugar.
