Chilled Salmon With Summer Tomato Salsa Recipe

Ingredients
  • 1 tsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 c sliced fresh tomato
  • 4 (4 oz) fillets salmon, skin removed
  • 1 garlic clove, crushed
  • Salt & pepper, to taste
  • 1 lime, cut in wedges
  • 1/4 c minced red onion
  • 1/4 c sliced fresh cilantro
  • 1/2 Hass avocado, sliced
  • 1/2 c cooked corn kernels

Directions
  • Step #1 Place salmon in a shallow microwave bowl.
  • Step #2 Add 2 c water.
  • Step #3 Cover & microwave on high 7-9 mins or until salmon is cooked as desired.
  • Step #4 Remove from water; put in the fridge until cool.
  • Step #5 In a small bowl, mix remaining ingredients (except lime).
  • Step #6 Refrigerate 30 mins.
  • Step #7 Serve salmon surrounded by the salsa & lime wedges.
