Southwestern Black Bean Dip Recipe

Ingredients
  • 1/2 c sliced fresh cilantro
  • 1 can (14 1/2 oz.) sliced tomatoes with chilies
  • 1/2 c sliced red onion
  • 2 cans (15 oz. each) black beans, rinsed & drained
  • 1 bottle (16 oz.) beer

Directions
  • Step #1 In a 3- to 4-quart pan over medium-high heat, 1/4 c onion, tomatoes, bring beans, & beer to a boil.
  • Step #2 Lower heat & cook, until most of the liquid is absorbed & remaining liquid is thick, stirring every once in awhile, 35 to 45 mins.
  • Step #3 If a smooth consistency is desired, whirl in a mixer or food processor/blender until smooth.
  • Step #4 Stir in remaining 1/4 c onion & the cilantro.
