Fried Calamari Recipe

Ingredients
  •  Vegetable oil
  • 1 1/2 tsps dried oregano
  • 3/4 tsp salt
  • 1 (2.5 lb) package cleaned calamari (tubes & tentacles), rinsed
  • 1 1/2 c all-purpose flour
  • 1 1/2 tsps paprika
  • 1/2 tsp pepper

Directions
  • Step #1 Cut calamari tubes into 1/4-inch-thick rings.
  • Step #2 Soak calamari in cold water 30 mins; drain.
  • Step #3 Pat dry with paper towels.
  • Step #4 Combine flour & next 4 ingredients.
  • Step #5 Dredge calamari in flour mixture.
  • Step #6 Pour oil to a depth of 6 inches into a Dutch oven.
  • Step #7 Heat to 400°.
  • Step #8 Fry calamari, in batches, 1 min, allowing oil to reach 400° before cooking next batch.
  • Step #9 Drain on paper towels.
  • Step #10 Serve as soon as possible.
