Tomato Marmalade Recipe

Ingredients
  • 1 tbsp minced garlic
  • 7 c sliced seeded tomato (about 3 lbs)
  • 1/2 c sugar
  • 1/8 tsp ground allspice
  • 3 tbsps molasses
  • 1 c finely sliced onion
  • 1/4 tsp ground red pepper
  • 1/2 c fresh lemon juice
  • 1/4 tsp freshly ground black pepper
  • 1/8 tsp ground cloves
  • 1/2 tsp salt, divided
  • 2 tbsps tomato paste
  • 2 tbsps olive oil

Directions
  • Step #1 Heat oil In a large-ish saucepan over med-heat/flame.
  • Step #2 Add onion to pan; cook 4 mins or until tender.
  • Step #3 Add garlic; cook 1 min.
  • Step #4 Add tomato; cook 4 mins.
  • Step #5 Stir in sugar & next 6 ingredients (through cloves) & 1/4 tsp salt; bring to a boil.
  • Step #6 Reduce heat, & let simmer until mixture thickens & is reduced to 2 1/2 c (about 65 mins).
  • Step #7 Stir in the remaining 1/4 tsp salt & black pepper.
