Grilled Bread With Serrano Ham, Manchego, And Olives Recipe

Ingredients
  • 1/2 c (about 2 oz) very thin slices serrano ham or prosciutto
  • 1/4 tsp salt
  • 1/2 c sliced pitted green olives
  • 8 (1/2-inch-thick) slices Italian or French bread
  • 1/8 tsp freshly ground black pepper
  • 6 medium tomatoes, halved
  • 1/2 c (2 oz) shaved Manchego cheese
  • 3 tbsps extravirgin olive oil
  •  Dash of salt
  • 2 garlic cloves

Directions
  • Step #1 Prepare grill.
  • Step #2 Mash dash of salt & garlic with a mortar & pestle or the back of a spoon to make a fine paste.
  • Step #3 Combine garlic mixture & oil in a small bowl.
  • Step #4 Place bread on grill rack; grill 1 min on each side or until golden brown.
  • Step #5 Rub both sides of toasted bread slices with cut sides of tomatoes, seeds, squeezing slightly to leave pulp, & juice on bread.
  • Step #6 Discard tomato peels.
  • Step #7 Spread garlic mixture over bread slices; sprinkle with 1/4 tsp salt & pepper.
  • Step #8 Cut each slice diagonally in half.
  • Step #9 Arrange ham & cheese over bread pieces, & sprinkle with olives.
  • Step #10 Serve as soon as possible.
