Eggplant Caviar Recipe

Ingredients
  • 1/4 c vegetable oil
  • 1 medium eggplant, peeled & sliced
  • 1 green bell pepper, sliced
  • 1 tsp Worcestershire sauce
  • 4 plum tomatoes, peeled, seeded, & sliced
  • 1 tsp salt
  • 1/2 c dry white wine or chicken broth
  • 1 large onion, sliced
  • 1 tsp hot sauce
  • 2 garlic cloves, minced
  • 1/2 tsp pepper

Directions
  • Step #1 Saute first 3 ingredients in hot oil In a large-ish skillet over medium-high heat 5 mins; add eggplant, & saute 10 mins or until tender.
  • Step #2 Stir in tomato & remaining ingredients.
  • Step #3 Cook, stirring every once in awhile, 5 mins or until liquid is absorbed.
  • Step #4 Serve warm, or chill up to 1 week.
  • Step #5 Serve with crackers or toasted pita bread triangles.
  • Step #6 Prep: 20 min.
  • Step #7 , Cook: 20 min.
