Ingredients
2/3 c all-purpose flour
Vegetable oil
Spicy Dipping Sauce
1 large egg
1/4 c milk
1 1/2 c Japanese breadcrumbs (panko)
1/2 tsp Cajun seasoning
1 3/4 lbs catfish fillets, cut into 1 1/2-inch pieces
1/2 tsp salt
Directions
Step #1 Combine first 3 ingredients; whisk together egg & milk.
Step #2 Dredge catfish pieces in flour mixture, & dip in egg mixture.
Step #3 Dredge in breadcrumbs.
Step #4 Pour oil to a depth of 1/2 inch In a large-ish skillet; heat to 375°.
Step #5 Fry catfish pieces, in batches, 2 to 3 mins on each side or until golden brown.
Step #6 Drain on paper towels.
Step #7 Serve with Spicy Dipping Sauce.
