Cheddar-chili Cheesecake Recipe

Ingredients
  •  Crackers
  • 1/4 c fine, dry breadcrumbs
  • 5 green onions, sliced
  • 1/4 c (1 oz) shredded sharp Cheddar cheese
  • 1 (10-oz) block sharp Cheddar cheese, shredded
  • 3 large eggs
  • 12 thin slices cooked ham, sliced & divided
  • 2 tbsps milk
  • 3 (8-oz) packages cream cheese, softened
  • 1 clove garlic, minced
  • 2 small jalapeño peppers, minced
  • 1 c sour cream

Directions
  • Step #1 Stir together breadcrumbs & 1/4 c shredded cheese; sprinkle on the bottom of a buttered 9-inch springform pan.
  • Step #2 Beat cream cheese at medium speed with an electric mixer; add half of ham, shredded cheese, & next 6 ingredients, beating at lowish speed until well mixed.
  • Step #3 Pour half of cheese mixture into prepared pan; top this with remaining ham.
  • Step #4 Pour remaining cheese mixture over ham.
  • Step #5 Bake at 325° for 1 hr or until center is set.
  • Step #6 Let stand 30 mins.
  • Step #7 Gently run a knife around the edge of cheesecake, & release sides.
  • Step #8 Serve slightly warm or at about room temp with crackers.
