Mini Turkey Burgers With Gorgonzola Recipe

Ingredients
  •  Cooking spray
  • 1/8 tsp freshly ground black pepper
  • 1 1/4 lbs ground turkey breast
  • 12 (1-oz) dinner rolls
  • 2 tbsps minced sweet gherkin pickle (about 2 small)
  • 1/4 tsp salt
  • 1/4 c reduced-fat mayonnaise
  • 1/4 tsp freshly ground black pepper
  • 1/2 c (2 oz) crumbled Gorgonzola cheese
  • 6 curly leaf lettuce leaves, torn in half
  • 1/2 tsp garlic powder

Directions
  • Step #1 Combine first 4 ingredients In a large-ish bowl.
  • Step #2 Add cheese, stirring with a fork just until mixd.
  • Step #3 Divide turkey mixture into 12 equal portions, shaping each into a 1/4-inch-thick patty.
  • Step #4 Heat a large nonstick skillet over medium-high heat.
  • Step #5 Coat pan with cooking spray.
  • Step #6 Add 4 patties; cook 2 mins.
  • Step #7 Carefully turn patties over; cook 2 mins or until done.
  • Step #8 Place patties on a large baking sheet in a single layer.
  • Step #9 Repeat procedure with remaining patties.
  • Step #10 Cool patties to about room temp.
  • Step #11 Cover up with plastic wrap; freeze until firm.
  • Step #12 Place in a single layer in zip-top plastic bags; freeze up to 3 months.
  • Step #13 Thaw patties overnight in refrigerator.
  • Step #14 Preheat oven to 400º.
  • Step #15 Coat a large baking sheet with cooking spray.
  • Step #16 Place patties on baking sheet in a single layer; cover with foil wrap.
  • Step #17 Bake 10 mins or until thoroughly heated.
  • Step #18 Keep warm.
  • Step #19 Combine mayonnaise, pickle, & 1/8 tsp pepper in a small bowl.
  • Step #20 Cut rolls in half horizontally.
  • Step #21 Spread about 1 tsp mayonnaise mixture on bottom half of each roll; top each with 1 turkey patty & 1 piece lettuce.
  • Step #22 Cover up with tops of rolls.
  • Step #23 Serve as soon as possible.
