Shrimp Skewers With Curried Mango Sauce Recipe

Ingredients
  •  Curried Mango Sauce
  • 2 to 3 tsps chili powder
  •  Garnish: lime wedges
  • 30 unpeeled large fresh shrimp (about 2 lbs)
  • 1/2 tsp kosher salt
  • 1 tbsp olive oil

Directions
  • Step #1 Peel shrimp, leaving tails intact.
  • Step #2 Devein shrimp, if desired.
  • Step #3 Toss together shrimp, salt, chili powder, & olive oil In a large-ish bowl.
  • Step #4 Thread 5 shrimp onto each skewer, bending each shrimp to pass through skewer twice.
  • Step #5 Grill, over high heat (400° to 500°) 4 to 5 mins or just until shrimp turn pink, without grill lid, turning once.
  • Step #6 Serve warm with Curried Mango Sauce.
  • Step #7 Garnish with lime wedges.
