Chicken-cucumber Canapes Recipe

Ingredients
  • 3 celery ribs, sliced
  • 3/4 c peeled, seeded, sliced cucumber
  • 1/2 tsp salt
  • 84 white or wheat sandwich bread slices (about 4 loaves)
  • 1/2 c sliced red bell pepper
  • 6 green onions, sliced
  • 2 (8-oz) packages reduced-fat cream cheese, softened
  • 1 tsp garlic salt
  • 3/4 c reduced-fat mayonnaise
  • 1/2 tsp freshly ground pepper
  •  Minced fresh parsley (optional)
  • 3 c sliced cooked chicken

Directions
  • Step #1 Stir together cream cheese & mayonnaise.
  • Step #2 Stir in chicken & next 7 ingredients.
  • Step #3 Cover up & chill at least 4 hrs.
  • Step #4 Cut bread slices with assorted 2 1/2-inch cutters, reserving trimmings for other uses.
  • Step #5 Spread half of bread shapes with chicken mixture; top each with a matching bread shape.
  • Step #6 Roll sandwich edges in parsley, if desired.
  • Step #7 Note: To make finger sandwiches, cut crusts from 42 bread slices (about 2 loaves).
  • Step #8 Spread half of slices with filling; top this with remaining bread slices.
  • Step #9 Cut each sandwich into 4 equal strips.
  • Step #10 Roll edges in parsley, if desired.
