Shish Kebabs With Onions And Pomegranate Molasses Recipe

Ingredients
  •  Lemon slices (optional)
  • 6 tbsps pomegranate molasses or hoisin sauce, divided
  • 1/2 tsp salt
  • 1 onion, quartered & separated into pieces
  •  Oregano sprigs (optional)
  • 1/2 c grated fresh onion
  • 2 lbs boned leg of lamb
  • 1/4 tsp black pepper

Directions
  • Step #1 Trim fat from lamb.
  • Step #2 Cut lamb into 60 (3/4-inch) pieces.
  • Step #3 Combine lamb, 3 tbsps molasses, grated onion, salt, & pepper In a large-ish zip-top plastic bag; seal.
  • Step #4 Marinate in refrigerator 8 hrs, turning bag every once in awhile.
  • Step #5 Remove lamb from bag; discard marinade.
  • Step #6 Thread 4 lamb cubes & 4 onion pieces alternately onto each of 15 (6-inch) skewers.
  • Step #7 Preheat broiler.
  • Step #8 Place kebabs on a broiler pan; broil 3 mins on each side or until desired degree of doneness.
  • Step #9 Pour 3 tbsps molasses evenly over kebabs.
  • Step #10 Garnish with lemon & oregano, if desired.
