Spicy Curried Fried Shrimp Recipe

Ingredients
  • 1 tsp coarsely ground pepper
  • 1 1/2 tsps garam masala
  •  Minted Mango Dipping Sauce
  • 2 lbs peeled & deveined jumbo shrimp
  • 1 1/2 c all-purpose baking mix
  • 1/3 c sesame seeds
  •  Canola oil
  •  Spicy Yogurt Marinade

Directions
  • Step #1 Place shrimp in a 13- x 9-inch baking dish; pour Spicy Yogurt Marinade over shrimp, turning to coat.
  • Step #2 Cover up & chill at least 3 hrs or overnight, turning every once in awhile.
  • Step #3 Remove shrimp from marinade, & place on a wire rack on an aluminum foil wrap-lined baking sheet; let this stand 10 mins.
  • Step #4 Stir together baking mix & next 3 ingredients In a large-ish bowl; toss shrimp in mixture until coated, shaking off excess.
  • Step #5 Repeat coating process.
  • Step #6 Return shrimp to rack; let this stand 15 mins.
  • Step #7 Pour oil to a depth of 1 inch In a large-ish, heavy skillet; heat to 350°.
  • Step #8 (Temperature will reduce as shrimp are added.
  • Step #9 For best results, keep temperature between 300° & 325°.
  • Step #10 ) Fry shrimp, in batches, at 350° for 3 mins or until golden; drain on paper towels.
  • Step #11 Serve with Minted Mango Dipping Sauce.
