Gougères (cheese Puffs) Recipe

Ingredients
  • 2 tsps Dijon mustard
  • 1/2 c grated parmesan cheese
  • 1 c grated gruyère cheese
  • 1 tsp freshly ground black pepper
  • 1/2 c butter
  • 1 c flour
  • 5 eggs

Directions
  • Step #1 Preheat oven to 425°.
  • Step #2 Heat butter & 1 c water in a medium saucepan over med-heat/flame until butter is melted & mixture comes to a simmer.
  • Step #3 Turn heat to low, & stir vigorously until mixture forms a ball that pulls away from pan sides, add flour, about 1 min.
  • Step #4 Remove pan from heat.
  • Step #5 Add eggs, one at a time, stirring vigorously after each.
  • Step #6 Dough will separate after each addition; keep stirring until it forms a smooth paste.
  • Step #7 Stir in gruyère cheese, Dijon mustard, parmesan cheese, & freshly ground black pepper.
  • Step #8 Drop mixture in heaping tbspfuls onto 2 buttered baking sheets.
  • Step #9 Bake until puffed & brown, about 30 mins.
  • Step #10 Cut slits in sides of puffs, return to oven, & lower heat to 350°.
  • Step #11 Bake 10 mins.
