Step #1 In a small bowl, lemon juice, oyster sauce, mix chili sauce, & cilantro.
Step #2 To shuck each oyster, cped side down, place shell, on a heavy towel.
Step #3 Grip curved end of shell with a towel & hold oyster level.
Step #4 Firmly insert an oyster knife into hinge at narrow end of oyster between top & bottom shell; twist to open.
Step #5 Slide oyster knife along underside of top shell to cut adductor muscle & free oyster.
Step #6 Remove top shell.
Step #7 Slide knife under oyster to cut free.
Step #8 Leave in shell & set shell side down on a tray.
Step #9 Spoon an equal portion of the chili sauce mixture onto each oyster.
Step #10 Set oysters on a barbecue grill over a solid bed of hot coals or high heat on a gas grill (you can hold hand at grill level only 2 to 3 seconds); close lid on gas grill.
