Citrus Glazed Chicken Recipe

Ingredients
  • 1 tbsp orange juice
  • 1/2 tsp grated orange peel
  • 1/2 tsp salt
  • 1 garlic clove, minced
  • 1 tbsp sliced fresh parsley
  • 1 tbsp lemon juice
  • 1/4 tsp ground ginger
  • 1 tbsp butter or margarine
  • 4 boneless, skinless chicken breast halves
  • 1 tbsp all-purpose flour
  • 3/4 c milk
  • 1/2 tsp grated lemon peel
  • 1 tbsp cooking oil
  • 2 green onions, thinly sliced

Directions
  • Step #1 In a shallow bowl, mix the first four ingredients.
  • Step #2 Pound the chicken to 1/4-in.
  • Step #3 thickness; dip into citrus mixture.
  • Step #4 In a large skillet over med-heat/flame, brown the chicken in oil for about 2 mins per side.
  • Step #5 Remove chicken.
  • Step #6 In the same skillet, cook garlic, onions & ginger in butter for 1 min.
  • Step #7 Add flour & salt; cook & stir for 1 min.
  • Step #8 Gradually stir in the milk; bring to a boil.
  • Step #9 Cook & stir for 2 mins.
  • Step #10 Return chicken to pan; sprinkle with parsley.
  • Step #11 Simmer for 8-10 mins or until chicken juices run clear, turning every once in awhile.
