Mini-spanakopitas (greek Spinach Pies) Recipe

Ingredients
  • 1 (10-oz) package fresh spinach, coarsely sliced
  • 1/4 tsp salt
  • 5 sheets frozen phyllo dough, thawed
  • 2 tbsps grated Parmesan cheese
  • 1 1/2 tbsps sliced fresh or 1 1/2 tsps dried dill
  • 1 tbsp fresh lemon juice
  • 1 large egg white
  • 1/4 c 1% low-fat cottage cheese
  • 1 tbsp olive oil
  •  Filling:
  • 1/4 tsp salt
  • 2 tsps olive oil
  • 1/4 tsp black pepper
  • 1 1/2 c sliced green onions
  • 1/3 c (about 1 1/2 oz) feta cheese, crumbled
  • 2 large egg whites, lightly beaten

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 To prepare filling, place spinach In a large-ish skillet or Dutch oven.
  • Step #3 Place over med-heat/flame; cook this until spinach wilts.
  • Step #4 Place the spinach mixture in a colander, pressing until barely moist.
  • Step #5 Combine the spinach & cheeses in a bowl; set aside.
  • Step #6 Heat 2 tsps olive oil in a nonstick skillet over medium-high heat.
  • Step #7 Add the green onions; sauté for 2 mins or until soft.
  • Step #8 Stir the green onions & the next 5 ingredients (green onions through 2 egg whites) into spinach mixture.
  • Step #9 Combine 1 tbsp olive oil, 1/4 tsp salt, & 1 egg white in a small bowl, stirring with a whisk.
  • Step #10 Working with 1 phyllo sheet at a time, cut each sheet lengthwise into 4 (3 1/2-inch-wide) strips; lightly brush phyllo sheet with egg mixture (cover the remaining phyllo dough to keep it from drying).
  • Step #11 Spoon about 1 tbsp spinach mixture onto one end of each strip.
  • Step #12 Fold one corner of the opposite end over mixture, forming a triangle; keep folding back & forth into a triangle to the end of strip.
  • Step #13 Place triangles, seam sides down, on a baking sheet.
  • Step #14 Bake at 350° for 20 mins or until golden.
