Cucumber-salmon-watercress Sandwiches Recipe

Ingredients
  • 3 tbsps finely sliced cucumber
  • 1/8 tsp ground red pepper
  • 3 oz cold smoked salmon, thinly sliced
  • 1 tsp trimmed, minced watercress
  • 1/2 c trimmed, minced watercress
  • 3 tbsps butter or margarine, softened
  • 12 whole wheat bread slices
  • 1/2 (8-oz) package cream cheese, softened
  • 1/2 tsp lemon juice

Directions
  • Step #1 Process cream cheese in a food processor/blender until smooth, stopping to scrape down sides.
  • Step #2 Add finely sliced cucumber & next 4 ingredients; process until well mixed.
  • Step #3 Cut 2 rounds out of each bread slice using a 2-inch biscuit cutter.
  • Step #4 Spread cheese mixture evenly on one side of half of bread rounds.
  • Step #5 Top with remaining bread rounds.
  • Step #6 Carefully spread the cut outer edges of sandwiches with butter.
  • Step #7 Dip edges in 1/2 c minced watercress, coating evenly.
  • Step #8 Cover up & chill 2 hrs.
