Avocado And Salmon Bruschetta Recipe

Ingredients
  • 1 to 2 oz. smoked salmon or trout, flaked
  •  salt
  •  fresh-ground pepper
  • 1 avocado (about 10 oz; see notes)
  • 4 slices whole-wheat bread
  • 1/2 c shredded lettuce or sprouts (optional)
  • 1 tbsp prepared pesto

Directions
  • Step #1 Toast bread.
  • Step #2 Spread pesto on one side of each slice.
  • Step #3 Pit, peel, & thinly slice avocado.
  • Step #4 Arrange avocado on bread slices, then cut each slice into quarters.
  • Step #5 Top with shredded lettuce or sprouts (optional), & smoked salmon or trout.
  • Step #6 Sprinkle top with salt & pepper.
