Grouper Nuggets Recipe

Ingredients
  • 2 tbsps cornstarch
  • 1/2 tsp garlic salt
  • 2 tsps quick-cooking grits
  • 1 c dry Italian breadcrumbs
  • 8 crackers, crushed*
  • 1 c all-purpose flour
  •  Canola oil
  • 2 large eggs, lightly beaten
  • 1 (1 1/2-lb) grouper fillet, cut into 1- by 2-inch nuggets
  • 1/2 tsp dried oregano (optional)
  • 1/2 tsp chili powder
  • 1/2 tsp freshly ground black pepper
  •  Herbed Tartar Sauce
  • 1 tsp salt
  • 1/2 c milk

Directions
  • Step #1 Stir together eggs & milk, & pour over fish nuggets; chill for 1 to 3 hrs.
  • Step #2 Combine flour & next 9 ingredients in a heavy-duty zip-top plastic bag.
  • Step #3 Add one-third of grouper nuggets, & shake to coat; repeat process twice.
  • Step #4 Chill coated nuggets for 30 mins.
  • Step #5 Pour oil to a depth of 2 inches In a large-ish skillet; heat to 350°.
  • Step #6 Recoat nuggets with remaining breading mixture, & fry in batches for 4 to 6 mins, turning once.
  • Step #7 Serve with Herbed Tartar Sauce.
  • Step #8 *In testing, we used Saltine crackers.
