Crunchy Orange Muffins Recipe

Ingredients
  • 1/2 c orange juice
  • 1/2 c sliced pecans
  • 1 tbsp grated orange peel
  • 1/2 c vegetable oil
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/2 c packed brown sugar
  • 1/4 c all-purpose flour
  • 1/2 c packed brown sugar
  • 2 tsps baking powder
  • STREUSEL TOPPING:
  • 1/2 c whole wheat flour
  • 1 tsp ground cinnamon
  • 1 egg
  • 1 c all-purpose flour
  • 2 tbsps butter or margarine, melted

Directions
  • Step #1 In a large bowl, mix the first seven ingredients.
  • Step #2 In a small bowl, mix the egg, oil, orange juice & peel; stir in theto dry ingredients just until moistened.
  • Step #3 Fill greased muffin c two-thirds full.
  • Step #4 Combine topping ingredients; sprinkle heaping tbspfuls on each muffin.
  • Step #5 Bake at 375 degrees F for 18-20 mins or until a toothpick comes out clean.
  • Step #6 Cool for 5 mins before removing from pan to a wire rack.
  • Step #7 .
