Crudités With Lemon-herb Dip Recipe

Ingredients
  • 2 tbsps thinly sliced fresh chives
  • 1 bunch (about 1 3/4 lb.) celery
  • 2 tbsps sliced Italian parsley
  • 1 lb carrots
  • 1/4 tsp salt
  • 8 oz room-temperature cream cheese
  • 1 tbsp milk
  • 1 English cucumber
  • 1 tbsp lemon juice

Directions
  • Step #1 In a small bowl, chives, with a mixer on lowish speed, Italian parsley, beat cream cheese, lemon juice, & salt until well mixed.
  • Step #2 Add milk & beat until smooth; if mixture is too stiff, add a little more milk.
  • Step #3 Spoon into a bowl.
  • Step #4 Rinse & thinly slice English cucumber (12 oz.
  • Step #5 ), peel carrots & cut into sticks, & rinse & trim celery & cut into sticks.
  • Step #6 Arrange vegetables on a platter; serve this with lemon-herb dip.
