Macadamia-herb Crusted Soft-shell Crabs Recipe

Ingredients
  • 1/4 c macadamia nuts
  • 3/4 c fine, dry breadcrumbs
  • 1/2 c fresh Italian parsley
  • 2 large eggs
  • 6 soft-shell crabs, dressed
  • 1 c milk
  • 2 tbsps butter or margarine
  • 1 c all-purpose flour
  • 1 garlic clove
  • 2 tbsps fresh oregano
  • 1/2 tsp salt
  • 1/4 c heavy whipping cream
  • 2 tbsps olive oil
  • 1/2 c dry white wine

Directions
  • Step #1 Process first 4 ingredients in a food processor/blender until finely sliced.
  • Step #2 (Do not overprocess because nuts will become oily.
  • Step #3 ) Stir in breadcrumbs & salt; set aside.
  • Step #4 Combine milk & eggs.
  • Step #5 Dredge crabs in flour; dip in milk mixture; & coat with nut mixture.
  • Step #6 Sauté crabs in oil In a large-ish skillet 2 to 3 mins on each side.
  • Step #7 Remove & keep warm.
  • Step #8 Add wine to skillet.
  • Step #9 Cook over medium-high heat until wine is reduced by half.
  • Step #10 Stir in whipping cream, & cook this until hot & slightly thickened.
  • Step #11 Remove from heat, & stir in the butter.
  • Step #12 Serve as soon as possible with soft-shell crabs.
