Stewed Mussels With Feta Recipe

Ingredients
  • 1/4 tsp dried oregano
  • 1/4 tsp crushed red pepper
  • 1 c (4 oz) crumbled feta cheese
  • 1 c dry white wine
  • 1 tbsp sliced fresh flat-leaf parsley
  • 64 small mussels, scrubbed & debearded (about 2 lbs)
  • 4 c sliced seeded peeled tomato (about 4 large)
  • 1/4 tsp salt
  • 3/4 c minced yellow onion
  • 1/8 tsp freshly ground black pepper
  •  Cooking spray
  • 1 tsp red wine vinegar

Directions
  • Step #1 Heat a large nonstick skillet over med-heat/flame.
  • Step #2 Coat pan with cooking spray.
  • Step #3 Add onion; cook 4 mins or until tender, stirring every once in awhile.
  • Step #4 Increase heat to medium-high.
  • Step #5 Stir in tomato, vinegar, oregano, wine, & red pepper; bring to a boil.
  • Step #6 Reduce heat; simmer 30 mins or until thick.
  • Step #7 Add mussels; cover & cook 5 mins or until shells open.
  • Step #8 Remove from heat; discard any unopened shells.
  • Step #9 Stir in cheese, salt, & pepper.
  • Step #10 Sprinkle top with parsley.
