Stewed Mussels With Feta Recipe

Ingredients

1/4 tsp dried oregano
1/4 tsp crushed red pepper
1 c (4 oz) crumbled feta cheese
1 c dry white wine
1 tbsp sliced fresh flat-leaf parsley
64 small mussels, scrubbed & debearded (about 2 lbs)
4 c sliced seeded peeled tomato (about 4 large)
1/4 tsp salt
3/4 c minced yellow onion
1/8 tsp freshly ground black pepper
Cooking spray
1 tsp red wine vinegar

Directions

Step #1 Heat a large nonstick skillet over med-heat/flame.
Step #2 Coat pan with cooking spray.
Step #3 Add onion; cook 4 mins or until tender, stirring every once in awhile.
Step #4 Increase heat to medium-high.
Step #5 Stir in tomato, vinegar, oregano, wine, & red pepper; bring to a boil.
Step #6 Reduce heat; simmer 30 mins or until thick.
Step #7 Add mussels; cover & cook 5 mins or until shells open.
Step #8 Remove from heat; discard any unopened shells.
Step #9 Stir in cheese, salt, & pepper.
Step #10 Sprinkle top with parsley.
